Berry Almond Chicken Salad
Like so many of of you time is a fleeting item. Hard to catch and hold onto. When we can save time we make an effort to do so. That is why I love no-cook lunches!
Berry Almond Salad with Chicken
Mixed salad greens
Handful of fresh strawberries, sliced
Handful of fresh blueberries
Handful of silvered almonds
Handful of Asiago cheese
Grilled chicken, chopped
Raspberry vinaigrette dressing
Prepare greens in a salad bowl and top with berries, almonds, cheese, and chicken.
Add raspberry vinaigrette dressing to taste.
Easy Raspberry Vinaigrette Dressing
1/2 cup unsweetened frozen raspberries, thawed
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon honey
Kosher salt and freshly ground black pepper
Place the raspberries, olive oil, lemon juice, and honey in a blender.
Blend until smooth.
Season with salt and pepper, to taste.
